February Wishlist.

Somehow, I feel it's evident that I would have my shit together if I had the items included in the set above.

While my paycheck won't stretch to allow me to indulge in all of the above, a girl can dream. In the meantime I'm going to give you a lowdown of my favourite items that I wish I could splurge on this month:

Converse: a funny story for you, over Christmas, during the floods that hit the North of the UK pretty bad, and cut off North Wales from the rest of the world I decided to help my family in securing my Nan's house. Obviously, with water nearly up to your knees you would choose to wear the only pair of leather converse shoes you have right? Well to be fair ladies, I had no other choice. I was home from London for Christmas and not expecting mass floods had only brought my beloved converse to wear on my feet. Long story short, Christmas 2015 will forever be the year in which my shoe got sucked into the ground. I'll fill you in on the details another time. *Note to self* Always have a back up pair of shoes. For this reason, I would love to splurge on two pairs of converse - one in candyfloss pink and another leather pair in gold (as seen above).

Unicorn mug: I love unicorns. If you don't love unicorns then this probably isn't the blog for you. I can picture myself chilling out on a Sunday as snug as a bug in the middle of a duvet day, unicorn mug in hand with some yummy hot chocolate and marshmallows. *snapping out of daydream* At £26 this is about six times more than I would usually pay for what is (lets face it) a mug. With this in mind, I'm going to hold off for now, but can see myself caving in pretty soon.

Mac Lipstick: I need a new lipstick in my life. Truth is, I'm all neutralized out from sticking to nude shades all winter, and am feeling something a little more colourful for Spring. I feel a MAC haul coming on next month, as I'll be spending the remainder of this month deciding on a suitable shade. I love pretty much anything coral based, and want to treat myself to MAC. If you have any recommendations please let me know!

So there are my favourite picks from my February wishlist. I'm also coveting the cushions (which would look fabulous in my bedroom), the cat lamp (though I don't know where I would put it) and the dinosaur toy turned cactus pot (at £12 why not?)

*Healthy* Oatmeal Muffins - You Can Thank Me Later.


Now I'm not going to sit here and lie to you, these aren't exactly 100% healthy muffins, but they are probably the healthiest muffins you'll ever eat. 

I saw this recipe on Pinterest, and instantly wanted to give them a go because they looked amazing. I had my apprehensions, because they're gluten and sugar free - and to be honest, anything I've had before that's both gluten and sugar free tasted similar to cardboard. These on the other hand actually taste really nice, but I guess you'll just need to try them yourself. 


The Recipe: (6 servings)

You will need: 
1/2 cup of milk.
1 cup of quick oats (You'll need to split these in half later as mentioned in method below).
1 medium egg.
2 tablespoons of unsweetened apple sauce, or juice an apple if you'd prefer.
2 tablespoons for splenda sweetener.
1 tablespoon of baking powder.
1/4 teaspoon of cinnamon.
1 pinch of salt.
1/4 teaspoon of vanilla essence or extract.
1/2 cup of blueberries and a banana. ( or any other fruit or nuts etc. that you may want to add into your muffins).
1/4 cup of margarine for greasing the tin - unless you use muffin/cupcake cases like i did.

Method: 
Preheat the oven to 180 degrees celsius.

Grease the muffin tin with margarine or place the muffin/cupcake cases in a muffin tin.

In a small bowl combine the milk and half the oats (unground oats). Let them soak for around 10 to 15 minutes.

Grind the other half of the oats in a food processor, until the consistency is similar to coarse flour. Grind as finely as desired.

In another bowl beat together the egg and apple sauce, vanilla and cinnamon. Stir into the oatmeal mix from the first bowl (milk and oat mixture). Add ground oats mixture, splenda, baking powder and salt. Stir until all the ingredients are well combined.

Gently mix in your blueberries and bananas (or whichever fruit or tasty filling you've chosen) into the wet mixture.

Spoon the batter into the prepared muffin tin until the cups are around 2/3 full.

Bake in pre-heated oven for approximately 15-17 minutes, until a toothpick inserted into the center of them comes out clean.

TIP: You'll want to eat these warm, and they're great at breakfast time or before a trip to the gym.
